These lemon and coconut bliss balls are such a delicious treat, are healthy (with small amounts of natural sugar) fresh and zesty tasting and are a great alternative to your usual cacao bliss balls.
My sister actually made these first and now it’s my favourite so I had to share! You must give them a go and let me know what you think.
INGREDIENTS
1 cup raw cashews ( you could substitute part with seeds, such as sunflower and white chia)
1 cup shredded/flaked/desiccated coconut
zest of one large lemon
juice of half a lemon
1/2 teaspoon organic natural vanilla bean paste or powder
pinch of sea salt (optional)
2 tablespoon organic honey (add 1T of extra honey, if you want them sweeter. I don’t think it needs it) or sweetener of your choice such as liquid stevia , rice malt syrup or maple syrup.

METHOD
- Place the ingredients into your thermomix or food processor and blend until the mixture is evenly blended into a rough crumb (do not ever blend).
- Using a spoonful , use your hands to shape the mixture into medium sized balls.
- Roll the balls in the extra coconut and place in the fridge to set.
These delicious lemony coconut bliss balls are very morish and i’d recommend doubling the batch if you can, or try not to eat them all in one go! I love the zesty lemon taste and be inclined to add more zest, but be mindful if you are feeding them to children, as they often don’t appreciate it as much as adults.
